*Entree:*
- Poached prawn with shellfish aioli, ginger, puffed scallop, and fennel cream
- Pork roulade with cabbage soup, bacon, spring onion, and brown butter bread crumb
- Crabmeat with creme fraiche, apple, celery, and nasturtium
- Steamed zucchini with apple, cucumber, capsicum jelly, labneh, and scallop
- Sous-vide cooked chicken breast with silverbeet lasagne, parmesan, and mushroom cream sauce

*Main:*
- Pan-fried beef tenderloin with braised beef cheek, prosciutto, smoked pomme puree, mushroom, and kale onion jus
- Sous-vide salmon with pipi cream sauce, brioche, speck, caviar, and potato
- Fish of the day with bouillabaisse sauce, olive paint, capers, chorizo, crostini, and roasted tomato
- Miso-glazed lamb backstrap with Asian-flavored lamb shank, prosciutto, eggplant, sesame, kimchi, and spring onion
